Rooftop Gardens

Yesterday a woman named Annie Novak came to educate our learning community about rooftop gardens. Annie works in Brooklyn at the New York Botanical Garden and she is founder and director of many programs around the boroughs. She explained to us how rooftop gardening is extremely ecological beneficial. Her philosophy is to transform roofs into gardens or farms.

Rooftop gardens are found in urban environments and save a lot of space. They are also at less of risk of being destroyed by animals being that they are not on the ground. Fruits and vegetables are grown in these farms and gardens and they are all organic. Nothing is sprayed with pesticides and nothing is processed. She told the class that if they ever wanted to buy a product that was “healthy” they should look at the label and make sure it says “organic” that way you know what you are eaten and how your food was grown.

Annie also explained that she never knew anything about plants and wanted to know more about something she never knew about. She went to school for journalism and she wanted to be a writer, but she came across this career and decided it was a better path for her. She is extremely passionate about what she does and I admire her for that.

Annie also spends a lot of her time with bees. She told us that honey is actually bee throw up which I found to be interesting and disgusting at the same time. Having bees around the rooftop garden helps with the soil and helps the plants grow.

After this lecture, I was inspired to eat more organic and rich foods. I never really had the opportunity to appreciate plants and trees but now since I am educated about them, I can now appreciate them more. Fruits and vegetables are an important part of any persons diet and they provide the body with proper daily nutrients. I really appreciated Annie coming to our school and now I will always truly appreciate plants.

Oxfam Banquet

Last night I had the opportunity to attend the Oxfam dinner with our learning community. Before this dinner, I had no idea what I was attending. When I walked into the banquet hall, I was handed a green card and was separated from my friends when I was directed to sit on the right side of the room. I was placed at the High-Income table with 4 other girls. My card said I was a 40 year old doctor living in India with my husband who is a businessman and two children who attend private school.

This banquet not only informed me with statistics about classes and different income groups, but also how people are living and what people are going through. A person truly does not know how good they have it until they have experienced poverty. POverty is extremely common but a lot of people, like myself, are not fully aware of it. I am from a fairly large town in New Jersey and poverty is not common at all.

Every year on Thanksgiving, my family delivers Thanksgiving dinners to elderly people in poverty. It allows me to be exposed to poverty and teaches me to be thankful that my family can provide me a meal on the dinner table every night.

The two girls presenting at the banquet had a lot to say about poverty in our area and really informed the students what it is like for people in need by giving us real situations and real people’s names and circumstances. This dinner was extremely informative and it makes me look at life differently than I did previously.

Detox Diets

As I was starting to write my final paper for Psychology class, I came across an interesting amount of cleansing and detoxing diets that I did not even think were possible. We often hear these words but don’t really know what they mean and why we proceed to follow them. The claim that I came across that I believed to be extremely interesting is the 3-Day Apple Detox. Although this is not my topic for my paper, I thought it would be interesting to talk about.

Apple’s are said to be one of the best foods for you because of their numerous sources of nutritional value. As the saying goes “An apple a day keeps the doctor away”, well, what about 3 days of just apple eating? This detox plan is said to flush your system, giving your digestive system a break so that a person’s body can repair itself. This detox goes beyond just a thin, lean look. It is scientifically proven to be beneficially for your body.

The process is more simple than most detoxes. Although the name of the detox is the 3-Day Apple Detox, it actually takes 7 days. The first two days is spent preparing by eating a lot of greens (vegetables, salad etc.) as well as fruits. Next, the 3-Day Apple detox comes in where all you do is consume as many apples as you want. The only other thing you have to do is drink plenty of water. The last 2 days are transitioning back into normal eating habits similar to the first two days of the diet plan. Essentially, this diet plan resets your metabolism and benefits a persons body tremendously!

New Jersey & Pork Roll

I was born and raised in a suburban area in central New Jersey called Freehold. In Freehold, there is an incredible place called Terrace Bagels. This was the place that everyone went to before school in the morning and also the morning after a late night out. When you walk into Terrace, you cannot expect to see no one you know, because everyone is always there from my town.

My favorite thing to get at Terrace is a pork roll, egg, and cheese on a bagel. Pork roll is a foreign term to most people besides native New Jerseyan’s. Some people call it “Taylor Ham” but in the Trenton area, it’s called Pork Roll and no one knows about it. New Jersey is known for more than just “The Jersey Shore”. Jersey has originated an incredible pork-based meat. North Jersey people refer to it as “Taylor Ham”, south Jersey uses the term “Pork Roll” and Central Jersey generally uses both depending on the area you live in.

Pork Roll is very easily made. All you have to do is slice 4 cuts on the circular piece of meat (so it cooks flat) and place it on top of the stove to cook on each side for about 2 minutes each.

Pork Roll should be distributed all around the country so that everyone knows how good it is- not just the state of New Jersey. Actually, part of Delaware, Pennsylvania and Maryland are becoming aware of pork roll and distributing it throughout supermarkets, diners and deli’s.

Student Athlete

For my Oral Tradition and Readers Theatre class I wrote a speech about being a college student-athlete. In this speech I touched upon the things I eat throughout my extremely busy days when I have class (Monday- Thursday). Usually in between classes I grab a bar to replace a meal and hold me over. I usually switch from different brands of bars every once in a while just to switch it up a little bit and not get sick of the same thing everyday. This past week I have been eating “KIND Healthy Grains” bars. These are small 35g bars unnamed-1that are supposed to replace my appetite and “hold me over” until I can eat a meal. Little did I know, the bars have too much saturated fat in order for them to be considered “healthy”. The bars reportedly have 1.5g (8%) Saturated Fat. I thought I was eating “healthy” foods that were low in fat the whole time, meanwhile, I was wrong. This can go along with the topic of the “Freshmen 15” anunnamedd how it is also false and mislabeled similar to KIND bars.

Mentoring Project

This past week I visited my mentee at Port Richmond High School. My mentee, Shannon, is one of the students in the class that basically cooks everything. She is not looking to go to college for cooking, but she is very good at it. The meal they made last week was stew fry. They prepared this meal by cutting up vegetables (peppers) one day, making the rice another day and cutting up the rest of the ingredients another day. The last day, Friday, was the day that they put everything together and it was incredible. I was shocked at how good these students were at cooking. They are IMG_6094all very young, 15 and 16 years old, and they can cook a meal better than most adults. Cooking is an essential trait that a person should have. Cooking isn’t just throwing cereal and milk in a IMG_6090bowl, it is knowing how to eat well with certain recipes and ingredients that are essential nutrients in a persons daily diet and these students really understand how to do it. This experimental learning project not only teaches my mentee, Shannon, about my knowledge of food and nutrition, but it also teaches me things about food that I never knew. Each week, Shannon will teach me how to make something new and I will notify her about why each ingredient is important to have in a meal. I feel as if this mentoring program will not only benefit Shannon and other students at the high school, but it will also help me and the rest of the Wagner College students in the program.

Exploring different foods in NYC

This past weekend the women’s soccer team decided to venture out into the city to watch a music festival down in Soho. Soho is probably one of my favorite areas in Manhattan because of all of the different kinds of neighborhood cafes, eateries, restaurants and unique specialty food shops. This part of the Village is known for its culture and social revolutions and is generally enjoyed by bohemians, beatniks, artists, and singers.

On the way back to school from Manhattan, a few of the girls decided we should stop for some lunch. We went up and down Prince Street a few times and we came across a restaurant called Delicatessen. It was a small little place that is a ultramodern diner and sold what most traditional American restaurants sell. I was in the mood for a nice, juicy cheeseburger. I am usually the one to go for a salad or something in that nature, but since we were off campus, I figured, why not?
The meal was so well prepared and it really clenched my appetite. There is nothing more tantalizing than a juicy piece of fresh grounded meat. The burger was layered in iceberg lettuce, onions, tomatoes and it was covered with melted slices of cheese that oozed over the sides of the toIMG_6025asted, slightly browned buns. This came with a side of fries and a pickle that was cut in half. On top of that I used ketchup to complete the taste of my burger.
One of the best feelings is finally obtaining the meal you have been craving for a while. I am so programed to automatically go for a “healthier choice” of food, that I sort have forgot what it was like to stuff my face with a nice, juicy cheese burger. In psychology, we have been discussing that there is really no such thing as a “healthy” or “unhealthy” food. If you eat the “unhealthy” foods in small proportions and control what you eat each day, body weight will maintain consistent. If a person eats big portions of high calorie dense food, they’re more likely to be at risk of overeating and obesity.

Food Cues

Over fall break I decided to go home to my hometown in Freehold, NJ. One of the main reasons why I enjoy going home so much is because of the incredible meals my mom makes. After spending a lot of time in traffic on the way home, I was very hungry. Thankfully, I walked into my house to a lovely meal of pasta with Bolognese sauce. This sauce has special ingredients in it that I will not share, but the basic ingredients include: carrots, celery, onion, garlic, a pinch of salt, fennel, tomato sauce, white wine, oil, and cheese. Its cooked on the stove for a few hours and then layered over al dente rigatoni pasta. After this, the sauce and pasta is put into a pan and a layer of mozzarella coats the Bolognese at a temperature of 375 degrees. To me, this sounds so incredibly appetizing. FullSizeRender

In psychology, we have been discussing things like food cue and hunger and it made me think that maybe I wasn’t hungry. Maybe I was just ready to eat something because it was that time of the day. The food cue that popped into my head was the time of day people eat. For me, the normal time of day to have dinner is around 6:00. It could vary for many people by hours or so, but the socially acceptable time in our society to eat dinner is around that time. Another cue that made me think I was hungry was the smell and sight of the meal. I know that this specific meal really clenches my taste buds and satisfies my appetite, but I did not have an appetite. This just shows that the presences of foods and food cues can really trigger an appetite even if it isn’t even there. We do not notice that food cues are the reason for us eating what, where and when we eat, but we do know that they’re what makes us eat. The idea of eating is engraved into our heads because of the social factors that take part in the idea of eating. Certain times, people, sights, smells and other factors make us want to eat and trigger an unwanted appetite.

Sodium Intake

As many of you know, my family has a very healthy lifestyle. We enjoy organic meals with low salt, low-fat, and a source of protein. Edamame spaghetti with a pesto sauce and grilled chicken is a meal I had this week. Like most of you, dining hall is not my first choice of food. MIMG_5916ost of the food there is processed and over-salted. Living at college, it’s very difficult to make your own meals, so my mom brings me meals every Sunday after my soccer games. This Sunday, she made Edamame spaghetti with a pesto sauce and grilled chicken. In order to make the sauce, she combined butter, almond milk, parmesan cheese and garlic. The organic Edamame spaghetti is gluten-free, making it a better food choice. The chicken was made on a grill with oil and lemon drizzled on top. The chicken is a source of protein and contains plenty of phosphorus that the body needs. Not only is this an enjoyable home-cooked meal, but it’s also a meal that contains the ingredients to make up a meal that I believe is healthy and nutritious.

According to New York Times article “F.D.A is Urged to Set Limits for Levels of Salt in Food” high levels of salt are unsafe and should be prohibited. The effects of high salt levels can lead to long term issues such as high blood pressure. Salt is currently overused in products and a limit is not set on how much can be used. People put salt on foods before even trying it; So, why even bother over-salting products when people are just going to do it anyways? The sodium-intake is extremely high in many people’s diets causing obesity and heart problems. Gradually reducing the amount of sodium in products can give people the opportunity to reach healthier levels of sodium and help resolve long term issues in diets.

Preparing Lasagna

          Every Sunday my family and I make dinner together. During this time, we get the chance to bond over things that have happened over the week. Instead of ordering take-out food or only having one person make a meal, we cook together to create new memories and learn better ways to make new meals. A meal that my mom taught us to make this Sunday is lasagna. The lasagna recipe in my family is incredibly tasty. It includes all fresh ingredients which make it more unique than a store-bolasagna-1ught dinner.

          In the morning, we prepared the sauce. The sauce included onions, celery, carrots, garlic and tomatoes. It also contained other ingredients that are a secret to the family recipe.  Once the sauce sat and cooked for a few hours, we placed lasagna noodles on the sauce in a thirteen by nine pan. After this, we mixed the eggs, parmesan cheese and cottage cheese together in a large bowl. One third of this is spread over the noodles in a pan. My mom likes to shred her own fresh mozzarella so we took the block of cheese and sprinkled one layer over the pan. This was repeated two more times to complete the three layers. We then placed the pan in the oven set at three hundred seventy-five degrees for about forty-five minutes. Once the top layer was light brown and had a bubbly-looking texture, we took it out of the oven and prepared to eat the meal as a family. This Sunday not only taught me how to make a delicious, simple, home-cooked meal, but also that making dinner with your family can be a very fun tradition to continue on with my own family someday.
