Carrots, Are They As Good As They Seem?

“Eat the carrots, they’re good for you, especially for your eyesight!” That phrase was most likely often mentioned in every household. Many of the claimed health benefits include an increase in cardiovascular health, avoidance of specific cancers, enhancement of the immune system, decreasing signs of premature aging, lowered levels of cholesterol, improved digestion, and enhanced vision. In addition, carrots are noted to contain a variety of necessary vitamins, antioxidants, and minerals such as, vitamin C, vitamin K, Vitamin B8, pantothenic acid, potassium, folate, copper, iron, manganese and vitamin A. Vitamin A, in carrots, helps people see in dim lighting because it converts the light into a signal that is sent to the brain. If the body does not receive a sufficient amount of Vitamin A, the cornea can just vanish from the eye, and can eventually lead to blindness. Due to these claims stating that carrots improve vision, many people eat copious amounts thinking their eyesight will be impeccable. However, contrary to popular belief, in order to preserve good vision, only a little amount needs to be consumed. High doses may have a negative impact on people who smoke, causing lung cancer and excessive consumption of vitamin A may be toxic to humans. United States Department of Agriculture came up with an advised portion size – a medium cup or half of a cup of chopped carrots is a serving size. Evidently, it is shown that carrots do not in fact improve vision unless the subject has a vitamin A deficiency or some other vision impairment. Due to this people can now be at ease and not be worried about consuming a certain amount of carrots a day!

Russian Hanukkah Dinner

Every year we start off Hanukkah with a big family dinner that includes an abundance of Russian infused Jewish foods. I love celebrating all of the Jewish Holidays because at every dinner we incorporate Russian dishes into the meal. This past Hanukkah we had a number of Russian dishes at the table. First, we had a soup called Borscht, which is a beet soup that is served with sour cream on top. In addition, we had Gifelte fish, which is a stuffed fish, filled with a mixture of chopped fish, eggs, onions, matzo meal or crumbs, and spices. Nowadays, it usually refers to poached fish cakes or a fish loaf, sometimes made with matzo meal. We had Knish, a kind of turnover, filled with one or more of the following: mashed potato, ground meat, sauerkraut, onions, kasha (buckwheat groats) or cheese, and baked or deep fried. Latkes were also prepared which are fried potato pancakes, usually eaten at Hanukkah with sour cream or apple sauce. Last but not least before the dessert entered the table we had Vorschmack which is also known as gehakte herring or chopped herring. It is strong tasting creamy herring spread, served on crackers or bread, very commonly used as a spread. For dessert, we had Blintz which are thin egg pancake wrapped around a sweet mixture of farmer’s cheese, potato, or fruit pie filling, similar to a crepe, but with the ends tucked in and fried again in butter; often served with sour cream. In addition, we had Hamantashen which is a triangular pastry filled with poppy seed or prune paste, or fruit jams, eaten during Purim. Last but not least we had Kichel which is a cookie commonly made with egg and sugar rolled out flat and cut into large diamond shapes; they are typically eaten with a savoury dip or topping. I am very thankful of my Russian background and the different types of dishes it brings to my dinners.

Alabama

Two weeks ago, I went to Alabama for the weekend to visit my best friend who goes to the University of Alabama. On the plane I truly did not know what to expect when I got there. Were there going to be farms surrounding everything or would it be a little more civilized? I know it may sound a little harsh, but when someone thinks of Alabama what do they really expect. I saw the difference as soon as I entered the airport, especially when it came to cuisine. Of course there were many chains in the airport but there were many restaurants and places to eat at that I have never heard of before. The whole airport in general had such a different vibe and southern aesthetic to it. Leaving the airport we drove about 45 minutes on a highway that had nothing around it and didn’t seem much different than the New Jersey Turnpike or the Garden State Parkway. As soon as we got off the highway however, it didn’t seem real. There was about a mile long strip, possibly even longer, of fraternity houses lined up in a row. Across the street from this strip, was also a long strip of an ample variety of restaurants and drive through fast food places. The constructor definitely lucked out on this one. The placement of these food places couldn’t be better; they were situated in front of 20 houses filled with hundreds of guys who consume this food multiple times a day. These small businesses undoubtedly thrive and are very successful due to the placement of them. In addition to this strip, right next to the school was another strip of clothing stores, restaurants, and bars that consisted of many chains such as Moe’s and Starbucks but also included many authentic southern restaurants. The whole southern experience was definitely a bit of a culture shock for me, someone who grew up in NYC. Nonetheless, I would enjoy going back there to explore the town even more.

Thanksgiving Dinner

This past weekend I was lucky enough to celebrate Thanksgiving multiple times with family and friends. On Thursday I enjoyed a wonderful meal with about 20 of my closest family and friends. We had everything from mashed potatoes, turkey, steamed broccoli, sweet potato fries with melted marshmallows on top, onion gravy, cranberry sauce and so much more. Every Thanksgiving we like to incorporate our Russian traditions into the Thanksgiving dinner including a variety of dishes that include fish, salads and other recipes. Even though we are Russian, my family really appreciates the holiday because they give thanks to our country for allowing them and us to be here. They are thankful to America for letting them in 30 years ago, letting them start a life for themselves and their children. Its safe to say that after my meal on Thursday everyone in that house had to be rolled outside to their cars because of how full we were. But the food didn’t stop there. On Friday, my friends and I decided to have a “Friendsgiving.” At 12 pm, all the girls gathered at my friends house to start cooking. We began with the turkey, putting all of the stuffing inside of it, which consisted of dried fruits and rice. After, we wrapped the whole turkey in bacon and placed it in the oven for it to start cooking. Then, we began preparing the side dishes such as baked mac and cheese and pizza bread. Our pizza bread consisted of tomato sauce, cheese, onions, garlic, and a few other spices. Following the bread, we made steamed vegetables: string beans, broccoli, peas, and some others. At about 4 pm, everyone else joined us at my friends house to indulge in this delicious meal. IMG_4053

This is what our meal looked like, two portions of everything and the turkey that was wrapped in bacon. It wasn’t exactly a very traditional Thanksgiving dinner but that was the point. We incorporated our own ideas and favorite dishes into this Friendsgiving dinner. Last but not least, my family and I indulged in our last turkey of the year this past Sunday. My mom has an adult day care business in which the elderly absolutely adore my mother. Therefore, one of the grandmothers decided to make my mom a turkey to show gratitude for everything she has done for the center and everyone within it. IMG_8128

This is the turkey that the grandmother prepared for my mom. My brother, my mom, my dad and I enjoyed this wonderfully delicious meal Sunday night to put an end to Thanksgiving.

No More Neophobia

Growing up, I kind of limited myself to the new foods that I was willing to try. I come from a Russian-Jewish background and the foods from those cultures are very interesting to say the least. For example, gefilte fish is something that my brother and I swore that we will never eat. When we were younger, we always used to laugh about how someone could’ve possibly came up with such a dish – fish jello soup. It still seems unreal to me but mostly everyone in my family indulges in it at almost every holiday. In addition, my family is the exact opposite of someone who is neophobic. They are willing to try almost everything including snails, alligator bites, frog legs and so much more. Ironically, they always called me the weird one because when we went out to eat I ordered calamari and penne vodka. It came to a point that the waiter at out usual restaurants knew what I was ordering before we even sat down. They always used to yell at me and make fun of me for constantly ordering the same exact dish at every place we went to.

I can’t recall the exact moment when my eating habits changed but all of a sudden I was willing to try foods that 3 years ago wouldn’t even cross my mind. My family was just as surprised as I was when we went to a sushi restaurant one day and instead of ordering chicken terriyaki I got a few different rolls that included a variety of raw fish and new ingredients that I have never tried before. Since that day, I was willing to try almost anything. I believe that broadening my horizons for food definitely made me overall a more open-minded person. I’m very grateful that my family sort of pushed me to try new things because now I can really appreciate all different types of cuisines that are offered in New York City as well as any other places that I travel to in the future.

Trip to Astoria

This past weekend my group and I visited Astoria, Queens. We didn’t really know what to expect driving into the neighborhood because we have heard and researched so many mixed reviews about it. However, we were definitely taken back while exploring all the different cuisines, beer gardens, and amenities that Astoria had to offer.

Before coming to Astoria we had researched that there was a scarcity of garbage disposals and trash cans in the neighborhood. While driving down 24th Ave, we noticed that between 31st and 26th street there were less than about 5 trash cans spreading across those 5 blocks. We were appalled by that how such a lively neighborhood and street can have such little waste disposal. Due to this, it contributed to the littering that took over the streets. But what struck me most wasn’t the power plant, or the littering, or the projects that we saw, but the vast variety of cuisine that was offered in the neighborhood. In just one block we saw a French and Italian bakery, a Greek restaurant, and much more. During our visit, we decided to stop by a little greek restaurant called BZ Grill. We read reviews about it which stated that this is the most authentic and delicious greek food in the whole neighborhood – and it definitely lived up to its word.

Its a very small place that has about 4 tables inside. The kitchen is right outside for all the customers to see and the meat is fresh and cooked right in front of you. image

It was crazy to see that this lamb was cooked and roasted on the skewers right in front of all the customers. My group and I decided to order gyros along with Greek fries that had feta cheese on them. To say that the meal was delicious would be an understatement. It’s safe to say that it was probably the most authentic Greek food I have ever indulged in. image image

Social Media

Every single person who has Instagram or Facebook can say that they follow some sort of food related account. Whether it is “NYC Foods,” “FoodPorn,” or any other food related account, those pictures of deliciously looking foods that pop up on our news food are constantly making us crave junk food more and more. Every time I open the Instagram app there is a new picture of chocolate sundae with sprinkles and melted hot fudge followed by a picture of a double bacon cheeseburger with every possibly topping and sauce ever created. Whether you’re hungry or not, seeing that automatically makes you crave it – also referred to as food cues. We never really notice it and realize how much these accounts impact the amount and choice of food. For example, my friend and I were sitting at home the other day trying to decide where we’d like to go eat. We spent about 45 sitting down on the couch scrolling through Instagram seeing if that could expedite the decision making process. However, that probably wasn’t the best idea. As soon as we came across one of these food accounts that displayed a picture of a curly fries tower with melted cheese and bacon bits on it we realized that thats what we wanted. But looking back on the situation I think to myself, is that really what we wanted, or did we just immediately crave it after seeing the picture? It’s really hard to say. Social media has such an incredible impact on the food choices we make today in positive and negative ways. When we see celebrities eat healthy and make nutritional food choices it often makes us want to do the same so we can look and feel as good as they do. However, when we see posts about stuffed nutella french toast and mac n cheese burger we are more inclined to crave that rather than a salad with celery and cucumbers.

Indecisive Diners

When going out to eat, we never really realize how much other people have an impact on what we decide to eat and order at the restaurant. We often don’t even notice ourselves looking around and gazing at other peoples plates trying to see if what they’re eating will influence our decision.

This past weekend, I visited Boston with one of my closest friends. During our visit, we decided to go to a restaurant called Cafeteria. As soon as we sat down my friend started to stare at other peoples tables while simultaneously trying to read the menu. We sat there for approximately 15 minutes rereading the menu trying to come to a conclusion on what to order. After about the third time the waiter came over and asked if we were ready, we figured it was time to make a decision. However, our conclusion was in fact based on the table sitting next to us. We saw them order a spinach artichoke dip that looked delicious so we ended up ordering the same thing. I wouldn’t say that coming into the restaurant we thought to ourselves “lets order the spinach artichoke,” however seeing the table next to us indulge in such a deliciously looking meal made us crave it more than we thought we did.

This just shows that as much as we don’t acknowledge the fact that other peoples choices influence ours, they really do and to a high extent – even at places such as grocery stores. When we walk down the aisle and see someone pick up a box of cereal, we automatically start to look and walk in that direction. We may not pick up the same box as they did, however we are more inclined to look into that category of foods because we saw someone else do it. This sort of behavior may be considered a good and bad thing depending on how you look at it. If you are influenced by someone who makes nutritional food choices then that would be beneficial for you; however, if you follow someone who usually picks up high carb, high sugar, and high fat foods then you should try and change that behavior. It really is peculiar why other peoples choices have such a huge influence on our own.

What Really is the “Ideal” Body Type?

While watching “Women’s Ideal Body Types Throughout History” it really amazed me how such varying body types were accepted at certain times in society. The “ideal” woman’s body type has taken on a number of forms over the past 3,000 years. This is partially due to the media who constantly either bashes or praises certain body types. They put high stress on girls in their teenage years through adulthood which makes them alter their body figures to fit society’s standards. However, beauty standards are constantly changing, especially for women. Every body type has at some point been “ideal; while this may sound like bad news, it’s actually immensely freeing to realize it’s pointless to make your body fit in with a trend. Your body is your body which means it’s not meant to be altered to fit a fashion statement. Many people who watched this video completely looked past the true meaning behind it and rather just observed the models. This shows that many people in society today are able to see beyond just the physical attributes of a woman while others are only focused on the woman’s image. As humans, everyday we seek to find and change the wrong and bad qualities of our physical image in order to be accepted and liked by society. But who are we fooling? We spend so much time preoccupied with the constant changing trends that we lose sight on our growing obsession with physical perfection. We should always remember that yesterday’s ideal standard will evolve into something completely different tomorrow. Since the ideal body has been changed so much throughout the years there is no doubt that it will continue to change in the years to come. There will never be a constant standard that every women in the world is trying to reach simultaneously. In addition, instead of trying to achieve this so called “perfect” body type, women should try and obtain a regular healthy lifestyle and body type that fits their own individual “ideal” standard.

A World Without Sunday Dinner

We really don’t think about how many things we take for granted in this world nowadays, especially food. After watching “A Place at the Table” it really opened up a new light for me in terms of food deserts across the country. For instance, when you think about Sunday dinner it doesn’t seem as a big deal to you. You value food as an every day privilege as expected three times a day; however, imagine your life consisting of consuming three bags of potato chips a day and that being the source of your daily nutrition. The problem across the country today is that many people are ashamed of acknowledging this problem, along with our government. They constantly talk about trying to resolve this problem but never really seem to make such difference.

As stated in the documentary, across the country today, one of out every six Americans say that they don’t have enough to eat. Along with this issue many families are food insecure, which means that they don’t know when their next meal is coming. Can you envision waking up everyday hoping and praying that you will be able to put some sort of food on the table for your children? This is an underlying problem especially in Mississippi. When I first heard that this state holds the highest obesity rate as well as well as has the highest food insecurity in America I was surprised. I thought to myself how could that be? I soon learned that this is occurring because a lot of residents in Mississippi don’t make enough money to buy healthy foods, therefore they have to resort to junk food such as donuts and chips. The price of healthy foods has gone up about 40% since 1980, which is why it’s so hard to acquire nowadays especially for people who receive a small salary. Throughout the years, while the price of healthy foods boosted up, the price of processed foods shot down about 40%. One of the primary reasons for this and the growing rate of obesity is the farm policy that we run by – which indicates what we subsidize and what we don’t subsidize. All of the natural and healthy options that are laid out in the supermarkets are all subsidized while the junk food that’s now sold at almost every deli, gas station, and supermarket is unsubsidized. The 23.5 million Americans that live in food deserts nowadays just eat what’s available to them, which is ultimately not much. Since these low-income families have to resort to eating junk food due to the unavailability and high costs of healthy food, obesity continues to grow. The government has set up a food stamp policy across the nation that is based on your total income. Even though food stamps may help a family for the first week or two of the month, they cant be the consistent source of food that’s needed for a family of at least 4. A very large issue with food stamps that a woman experienced in the movie was that as soon as she started to make some money that was above the maximum salary needed to receive food stamps, she could barely put any food on the table for her kids. The problem is, is that it’s a lose-lose situation nowadays. Either you don’t have a high paying job and receive food stamps that put some sort of food on the table, or you get a job that no longer qualifies you for food stamps which poses an even bigger struggle when acquiring food. I believe that one of possible solutions that should be more addressed would be to lower the cost of these healthy and nutritional options rather than just implementing supermarkets in these food deserts. Just because the healthy and nutritional options all of a sudden become available doesn’t mean that these residents can purchase them or are willing to change their eating habits. The government should start more programs that will provide and distribute free healthy food options to those in need. After watching this movie I became much more intrigued with the subject and hope to learn more about it throughout the semester.
